Modern Bento Offers Sushi and Savory Tastes Paired with Optional Sparkling Sake and Champagne. 

Offering a modern take on the classic Japanese single portion meal.  Each Ascend bento is a sampling of three tastes of sushi and savory items selected from the dining menu. They are available at the sushi bar, lounge and lounge patio on Monday-Friday from 5-7pm.  Culinary Director Kevin Hee, Executive Chef Sean Mayhew and Executive Sushi Chef Yuki Ieto have collaborated to create 4 bento offerings:

  • Vegan {Vegan maki, roasted cauliflower, tofu caprese salad}
  • Land {Wagyu beef roll, Mishima Ranch beef tartare, Ascend onion soup}
  • Sea {Hamachi & truffle roll, halibut brandade, miso glazed black cod}
  • Mix {Wagyu beef roll, halibut brandade, tofu caprese}

Beverage Director Brandon Rastok has selected 3 optional bubbles to accompany: Dewazakura Tobiroku, a somewhat rare dry sparkling sake will compliment all Bento, and Ruinart, one of France’s oldest champagne houses, will pair the Blanc de Blanc with the Vegan and Sea Bento, the Brut Rosé will be paired with the Land and Mix Bento.

Prices range from $20 to $40 for just the bento; $30-$50 with the addition of a glass of the sake bubbles and $45-$60 with a glass of champagne.

During Bento & Bubbles, ten cocktails from the Ascend lounge will be available for $12 along with a selection of sparkling wines {$8-$17}, white and red wine {$9-$17}, sake {$8-$13} and beer {$5}.
